Do you have ...any advice for the person that is not local and wants to grow mushrooms for themselves only? Is drying about the only way to store the mushrooms most effectively? We appreciate all your information--it's wonderful.

Agaricus production (ports and buttons) is something that requires training. Shiitake and Oyster are a little easier for people to do following directions/book.
We are going to start smoking and drying as well as just plain drying our 'overstock' when that starts happening. Hopefully next week we will see extra. We dry all but white buttons.
Another way is to can them... though they may loose something in translation. However, you can can them in olive oil with various spices and herbs and that can make a special treat to use throughout the winter. I've canned them in my pasta sauce. That works well.
I also like to freeze them. You can slice them up, place on a cookie sheet in a single layer, freeze, then put them in a freezer baggie to use later.
To use do NOT thaw! Put right into the frying pan and cook them up.
You can also pre-make stuffed mushrooms, freeze, bag and pull out as you need - go directly to the oven with them... do NOT thaw.
